Maple Pumpkin Spice Granola

Now that it’s Fall, I’m in the mood for everything apple, pumpkin and spice! I took a recipe for a different granola I liked and decided to change it a bit to make it more of a “Fall” granola.

Heat oven to 275 degrees. Mix the following dry ingredients together in a bowl.

3 cups Sprouted GF Rolled Oats

1/2 cup Sprouted Pumpkin Seeds

1/2 cup unsweetened shredded coconut

1tsp Pumpkin Pie Spice

1/2 tsp Cinnamon

1/2 tsp Celtic Sea Salt

Once mixed, add the following and mix until everything is wet.

1/4 cup real maple syrup (I cut it down from 1/3 cup to make it a little less sweet)

1/3 cup extra-virgin olive oil

1tsp vanilla extract

Add mixture to a shallow pan lined with parchment paper. Bake for 20 minutes, move the granola around and bake for another 20 minutes (40 total minutes). Cool and store in glass jar or container.

My personal favorite is to stew some apples with some pumpkin pie spice or cinnamon sprinkled over them and add the granola on top! Tastes like a hot apple crisp and can be a nice warm breakfast, or an easy, healthy dessert!
